Fish Roe

Fish eggs, also known as roe, are the fully ripe internal the ovaries, or the released external, egg masses of fish and also some shellfishes, such as scallop, lobsters and shrimp.
True roe (or hard roe) only comes from female fish, but you can find also soft roe from the male fish, which is, in substance, the semen or milt.
Fish roe can be eaten raw with some bread or Cracker or cooked as ingredient in many dishes. Fish eggs have many nutritional benefit such as vitamin D, omega-3s, magnesium, iron and are also rich in vitamin B12.
Roe can come from all different kinds of fish, and take also different names in relation to the different fish: Caviar (beluga sturgeon roe), Kazunoko (herring roe), Botargo (grey mullet roe or tuna roe), Masago (Capelin roe), Ikura (Salmon roe), Shad roe, Tobiko (Flying-fish roe, it is used in creating certain types of sushi), Lumpfish roe.
