Poultry describes birds that have been domesticated and farmed, whereas game birds live in the wild and are hunted for food. Poultry and farmed game are available all year round, but true game birds ara available only seasonally, usually in autumn and winter. Raw or undercooked poultry may contain bacteria that can cause food poisoning, so it is essentials to store, handle and cook poultry appropriately.
