Orecchiette, also referred to as "strascinati", "strascicati" o "Recchie", are a type of pasta typical of the Apulia region (south Italy).

The shape is round and hollow, making them just look like small ears from which it derives its name.

Orecchiette Casa Prencipe are produced according to the gastronomic traditions of Puglia with white flour, durum wheat semolina and water.

In the traditional recipe from Apulia they are boiled with potatoes or broccoli and topped with a tomato sauce and italian sheep's milk cheese or with olive oil and garlic.

The most famous dish and most representative of Apulia, and in particular the province of Bari, is orecchiette with rapini.
